Homebake Pineapple & Cocktail Buns 菠蘿飽, 雞尾飽

Today my baking adventure was Bor lor bao (pineapple buns) & gay mei bao (cocktail bun).
 I was full of excitement to do it.... but have to admit... if you do not have a whole day spare.... or tons of patience.. then dont attempt... because there is a lot of waiting around. 


I knew the dough need to rise for 2 hrs... so that was first thing i did before i think about breakfast. Thank the tv i was easily occupied for an hr, had breakfast...  whilst the clock ticking...i went straight in making the pineapple pastry topping & the cocktail bun filling... now and again i have a peep at the dough and wish it rise quickly. 

      


2hrs finally arrived, and all the measuring, stirring, everything was ready.... time to get my hands dirty with the bread dough.  The dough was very malleable, very light but you need a very sharp knife to cut into it in order to divide it. (i felt like i was 6 again.... when my grandpa gave me a tiny piece  of dough  for me to play to occupy my time... so...very nostalgic!)
 
Anyway, rolling the dough in my palms, put it on the cake cases on the baking tray... spray a tad of warm water, wait it to rise.. but whilst my fingers busy rolling the pineapple pastry topping... then time flies put it on the little doughs.... and it was time to go into the oven!



tick tock tick tock.... 18mins later.... tada! The first batch of homemade bor lor baos!



whilst waiting for the pineapple buns..... no messing about, my urge to make cocktail buns, fiddling with the little dough, scooping the coconut filling on the dough, wrapped the dough over and at the end give the dough ball a little roll in my palm. Again, put them on the cake cases on the baking tray, and leave it awhile for it to rise.
Then put it in the oven..... 20mins....tada.... first batch of mini cocktail buns.

 



Was on the roll, and i had lots of coconut filling.... so at the end i combine all the ingredients to make
Pineapple Cocktail Bun.



5hrs in total..... not bad for a big tray of buns! Happy thing is... my other half thinks its really good! Make me soo happy watching him make the first bite.....it was Bun power! yippee!
