Friday! Afternoon Cuppa with Mum

Yay! Its Friday again!  Its one of the things that both my mum & I look forward to, i take my mum for a hot chocolate, (to find the best hot chocolate in Manchester), and i get to hear and learn about my mum.
I ask you, how many of you REALLY know your own mother? I mean we sometimes take it for granted that they are here all the time, and be there for your by thick & thin, low or happy. 

Me & my mum have a very close relationship, we can chat to each other like friends, but we were at a terrible stage where we argued alot, almost everyday... me teenage.... who not argue and start to think mum is being abit overbearing and in return mum think i'm not listening to her.
It take 3yrs being away from home going to uni, to appreciate how lucky i was to have my mum doing everything.
Then it take life experience to make you realise.... wot a unique relationship we both have, and if you dont take the opportunity to make a good memorable time... then one day i potentially could regret it. 
So with experience and with reflecting on how to communicate with ppl, i start to think how can i communicate with my mum.... i mean i now can stand in her shoes and say.... of course my mum shouts at me, because she not that well educated, and she dont really know what i do...dont really have that detail of art, fashion.... its not her fortay.... tv drama, food shopping is my mum's interest.... so first of all i have to realise that if i want to share my thoughts on a particular subject, i first have to explain to my mum wot it is, before she can join in the conversation. Or talk about what she is most familiar...... its like talking chicken to duck if my mum dont know about computers right.  Also, learn not to overreact.... if my mum said something not too nice...  instead hit back with slanging words, i calm down, and tell my her 'mum, i dont think that was very nice....'. 
So on that basis.... me & my mum have a very honest relationship, if she dont like something she tells me, and if it hink my mum is doing something i dont agree, i can also tell her. 


Anyway, this week we kept it local, only in Sale town centre, we went in Cafe Nero for a Hot chocolate in soya milk with some shortbread biscuits.  Its a good cosy cafe, can have a good chat, but no one interfering, staff are really nice.

the appearance looked really good, got enough froth on the top, tasted really chocolatey..and fairly smooth.. but fell behind that it was a bit on the lukewarm.  If it was a bit hotter... then it would have been perfect.

Whilst sipping away, since my mum started telling me stories of her past.... so i asked her to tell me more of when she first came over to England.
Well she said the day she left the village to get board her first ever plane..... she said it was a very emotional time... because her grandfather whom she was very closed with.... took her to the now car park... and as he waved her goodbye... he was crying.  Mum said that her tears was uncontrollable.... but coz going to the airport she didnt look worst for wear... she kept trying mop her eyes.
At the airport... mum had a good sendoff, with lots of her friends.... mum said her heart was full of excitement to go on the plane, as well as land on the island called England.
Mum said in her head she got stories of village friends who return home, would tell them stories how england is really good, that u can earn a lot of money, the pound is worth 20 times more than HK dollars, that standard of living was really good, even the food is great, pigs was bigger.... so being at the age of 19.... hearing the potential of earning alot of money, and going to a place that seems better than HK was very appealing.

Anyway, land to London Gatwick.... first thoughts was UK is very very cold, and very grey. Mum got to a bad start, her suitcase was searched.... it was smelly and thats because she had smelly saltyfish and pork jerky in it hahah.... but back in the 70s, it was ok to bring food over.  I asked my mum how did she felt.... she said she tried to remain calm, but was a tad nervous, as dont know any english was hard to understand whats going on. 

Anyway, my aunt who came over to UK lot earlier picked my mum from the airport, then get the train to Gloucester.  My mum first impression of England was a shock...... she thought the houses and buildings looked abit drab... somewhat abit on a deprived side and streets look soo deserted... compare to HK everywhere you go you see people.  Anyway, aunt to my mum to her workplace dormitory. Got introduce to the boss etc, my aunt was a waitress in this restaurant, and her attitude is need to hardwork, and make urself availiable and not mind doing abit extra. So she asked my mum to help out, as the porter was her day off.  Mum said just as she about to move to the sink, her husband rushed so quickly to washed the dishes.... my mum said she understand why he did that, because he was scared she would take his wife's job.  But mum said she didnt really wanna do it in the first place!
Because the restaurant owner mum was from the same village as my mum & aunt, she was very generous and gave my mum a wad of notes for just in case, which this day she dont know how much, my aunt also gave some money to my mum too... so the next day whilst my aunt had to work, she got one girl who was her day off to take my mum to have a walk ard.  Mum said she dropped money, and not realising it and even today was felt really lucky when she looked down on the floor it was still on the floor next to her foot, which she still had to think 'ooh is it mine or wot?'
After a week, my aunt took my mum to Exeter to her first job in a takeaway working in the kitchen. I asked my mum if the boss was old, and she said the boss was fairly young in his late 20s, and he & his wife had 2 children. Mum said it was very heartfelt, that the boss n the wife would work whilst having their kids strapped on their backs.  The boss was nice and courteous, and treated my mum well....they let my mum eat anything she wanted, but when it comes to other things he was a scrooge. Mum said that her room was very cold, she had like 2 duvet to sleep! So she went and got a floor heater.... worked first time, but the next time it didnt work.... so my mum took to her uncle (who also worked and lived in Exeter) to fix it, put a new fuse in.  But by next day.. the heater didnt work.... and only realising later, that it was the boss took out the fuse, so they can save on the electric bill. 

A funny story made us both giggle was with the english language.... she said when she go to shops and you see butcher counter.... they display pork, beef, chicken, lamb.... when my mum was really confused..... she thought how come all the english all different from when she learn at school..... pig is pig why is it pork, beef is it now cow? chicken is not hen? and why is lamb not sheep.....but why is duck still duck.  Mum said back of her head she thought her teacher must be a fake, just taught her & classmate anything.  Obviously she didnt ask anyone, as dont want to embarrass herself for being abit backwards.. so she got her notebook out and wrote it down. 

Anyway, by then it was like 5pm, so it was time to go home.

Golden Egg Tarts

Golden Egg  Tarts. - Make 24.

Ingredients for Pastry:                                             

500g/1lbs     Plain flour
110g/40z      Icing sugar
2 tbspn         Instant skimmed milk powder
280g/100z    Butter
1                  Free range egg
1 tspn          Vanilla Extract


Ingredients for Filling:
8oz              Hot water
4oz              Granulated sugar
4                 Free range egg
1/4 tspn       Salt
3oz             Evaporated Milk
1/8 tspn      Yellow food colouring
1 tspn         Vanilla Extract.

Pastry Making -
1) Beat butter until creamy. Add icing sugar and continue to beat.
2) Add egg & vanilla extract. Continue to beat. Keep stirring until all the mixture becomes soft and creamy.
3) Make a well in the sieved flour & milk powder. Add above mixture in the well.
4) Mix well by lightly pressing & folding the two mixture in repeated motion. Keep folding pastry until it looks like a soft dough.
5) Divide dough into 2 long rolls.  Cut each roll into 12 equal portions.
6) Press each portion into metal cases.

Filling-
7) Dissolve sugar in hot water.
8) In a bowl & whisk mix well with eggs, evaporated milk, vanilla extract, salt and food colouring.
9) Pour slowly dessolved sugar/hot water into egg liquid but stir rapidly.
10) Transfer filling mixture into a jug.

11) Preheat oven to approx 210C
12) pour egg filling mixture into the egg tart pastry.
13) Bake for aprox 15-20 mins.  (The pastry should look golden, and egg should be set when take it out.)
14) Take it out of oven and leave to cool down for 5-10 mins. Take it out from metal/silicon cases and put it in paper cases.

YAY! Success in home bake egg tarts!

Wahoo! What seem like agess.... but i have succeeded with my first ever attempt in making egg tarts!!!
 


Soo happy!!!!.....considering at 12pm i was contemplating the idea... because i dont have aluminium tart cases.... but silicon cake cases..... should i wait till later..... millions of questions going through my head.
So whilst need to pop into Sainsbury for a few more ingredients....  i took this opportunity to an extended trip walk around and have a very good think.

Got home at 3pm, and decided going to risk it and do what i orignally planned!
3.30pm... started to make it... following the instructions... and being really careful with my ounces & grams.
Never made pastry before..... really concentrated in getting that lump of pastry in to shape. Then had to do the filling.... which wasn't that hard.




Anyway, once i got the pastry into the cases.... and carefully poured the egg filling.




Put the first batch (9 of them) into the oven.........




The wait was just nerve-wrecking...... tick tick tick tock.....is it gonna be a flop or success??? ......22 mins later
Tada!!!! 

 

then let it cool down..... tasting time -  ken said ' hmm taste like the ones you get in chinatown!' make me soo happy.



it really did tasted good... only bad comment is that it doesnt look like the ones you get in chinatown... but its homemade!!!!
   

2nd batch went in........ 30mins later.....

Friday again..wahoo... Hot Chocolate time

Its friday again... the week has gone soo quick! 

Anyway, went straight to pick up my mum and our destination is Manchester city centre,  mum fancy a little walk in the shops.... so once we walked to Burger King..... the glorious sunshine turned into miserable rain... so quickly dashed to Debenhams for a walk in and let my mum look at handbags et. But mum wasn't really in the mood for shopping.

So once the rain stopped we went into Arndale Centre, and mum wanted to go to the fish market... which she did get a lemon sole for tonight dinner just the 2 of us. 
Plenty of time... mum wanted that cuppa.... so decided on Bagel Nash for our afternoon hot chocolate in soya milk. 

We were sipping it, whilst mum chatting away saying how time has changed... when i was young she will make hot chocolate for me & my sister, even take it in a flask so i have some after swimming lesson when we were both at primary... but she never enjoyed it... and now she sitting here sipping it and look forward to the next hot chocolate.
She also shared her stories when she first came to england, how she first tasted coffee and thought it was very bitter, bit like the herbal medicine she drank when she got ill , and tea tasted soo different from the english tea you have in HK.  She also thought the early days in being in England was hard, how she missed home so much..... i.e she missed the food,  wanted chinese food couldnt buy it, wanted rice rolls (cheung fan) for breakfast.... she get beans on toast - and then she thought it was very sour and after about 5 times was really bored of it.  Think one thing made her miss home alot was thinking how lucky she was at home to have her mum, gran all there to do stuff for her- as from growing up on a farm which grows great selection of vegs, rice and farm animals to sell and she didnt really need to do much, came to england at 17, 2nd day in, in her first job had to sit on a little stool in the dark dingy basement of a chippy - washing her first batch of beansprouts.  Mum said the boss sympathise with her and gave her a pair of rubber gloves so her hand wont freeze! At home she just worked in the factory sewing gloves, and wages earned she could save up and eat out, buy whatever she wants - so a care-free life. 
But she said she didnt give up, she said want to make something in life and to show her grandparents that she can do it and make them proud.  I really do admire her courage for carry on, even though she didnt know what the future would become. 

So after all the chatting, we both decided since whenever i can on a friday, we meet up for a hot chocolate.... so why dont we go loadsa places in manchester to search for the best hot chocolate!  Something for my mum to look forward to and its an inexpensive way to relax and have mum & daughter time!

Mum will be the judge and heres the verdict of todays cuppa of chocca:

So Bagel Nash is a 7/10 -

The look, and size is good.  Temperature was just right, but tasted a little chalky.

Yum Yum... crabby!

After going to a few more shops to let my mum get bits n bobs, it was almost 6pm... time for home. Parked my car near Jurys Inn Hotel, so had to trek all the way back. 

But by the time we got to The Circus Casino, mum's legs felt really tired, and on a spur, she decided we stay out and eat at Tai Wu.

Walk in even the managers said to my mum.... is it my eyesight poor, friday night you coming for dinner????? lol.

So we sat down, drinking Chinese tea, and mum decided she want to have her favourite food, and also let me join in the experience of this very dish - Golden Crab (金莎霸王蟹) - Crab with salty duck egg with onions. 
So between us we had pork dumpling as starter, then THE crab and a veg dish( with white rice came out!



Crab tasted soo heavenly, and soo tasty - you want to eat the crumbs of the salty duck egg on the outside shell, and excavate the crab meat from the inside  It was soo tasty, the veg was forgotten, and chopsticks stayed on the table and me & mum was tasting the crab for ages- proper messy hands!. 
Good job we had the dumplings first, or it be forgotten too! 

It was a very satisfying meal, finished with a few oranges and coconut jelly as dessert, then it was proper home time and lounging on the sofa for some tv!  haha.

Baking Fairy Cakes

Felt like baking cakes today.... something about making something in the kitchen make me feel good, and therapeutic. Baked 5 trays of fairy cakes.... wasnt that hard at all....only took less than 2hrs...hmm definitely need to do something more challenging!


    

Chocolate Chip Cookies

Who can ever resist chocolate chip cookies? An all time favourite  by everyone.

Makes 40

Ingredients:

335g plain flour
250g softened butter
165g sugar
165g brown sugar
1       egg
1tspn vanilla extract
1tspn bicarbonate of soda
300g dark eating chocolate, chopped coarsely.

Instructions:

1)Beat butter, sugar, eggs and vanilla in a bowl until light & fluffy.
2)Stir in flour & soda and mix well
3)Add in chocolate, mix well together and cover it in cling film and re-fridgerate for 1hr
4)Preheat oven to 180C. Grease baking tray with some butter.
5)Roll level tablespoons of the dough into balls. Place it on the baking tray with approx 3cm apart.
6)Bake for 12mins
7)Take out and let it cool.

Fairy cakes

Fairy cakes are the basics of all baking, and it was back in school i learnt how to do it. It made me very happy and a great sense of achievement coming home with my dis-arrayed uniform and me holding a box full of cakes waiting for my mum to be the first taster.  She loved it then, and she still do now, which i made thorough my life when i have time.Nice and simple!


Makes 24

Ingredients:

125gm self-raising flour
125gm softened butter
125gm caster sugar
2          eggs
1tspn    vanilla extract
2tbspn  milk


Instructions:

1)Pre-heat the oven at 190C. Put cake cases in the 12 hole bun tin/baking tray
2)In a mixing bowl beat the butter and sugar until pale and fluffy.
3)Add beaten egg and vanilla extract and mix well
4)Sift flour and milk and mix together the mixture.
5)Spoon into the tin and bake for 12mins or until risen and golden on top.
6)Allow to cool for 10mins on the rack before removing from the tin.

Friday afternoon tea.... hmmm

Friday 2.00pm, woohoo finish work, the weekend starts!

Dashed off asap to pick up my mum to take her out for afternoon tea to celebrate her birthday.... just me and my mum.  But its raining, feeling soo cold, mum decided she wanted to eat something at chinatown.... so head to Happy Seasons.  Not been since its been re-open.... but tell ya..... nothings changed... one sentence of today's experience..... only going coz mum wants to.  As long as my mums happy.... anything i could let it go!!!!




Anyway, we ordered a wonton soup egg noodles & three roast rice, but at the end we only eat the noodles and took the rice as a take-away.
Anyway after food, instead going to have afternoon tea - we went to Wing Yip, so that my mum can buy her grocers, and have a chat with the locals.  Mum was happy like a chirpie chick! 



 
 

So at 4:30pm we went to Midland Hotel for our afternoon tea..... soo good, sitting on the sofa, my mum with a hot chocolate, and i got cream tea with scones..... and just sit there chatting, talking about my childhood stories, abit about my mums childhood..... and not long it was 6pm... time to go home. Such a good way to end a afternoon, and soo happy to see my mum having a good day!

Mum's Birthday - a very special one for me

  Today at Tai Wu in Manchester, i'm treating my mum early with a meal to celebrate her 54th Birthday. Its indeed special to me, as for a long time since i remember things.... mum always said, which eventually been drilled into my head.... 'i had you at 27, so when you reached the age of 27, i be 54', and today its the day (well on friday).

Anyway, arrive to the restaurant, and my family all sat down eagerly and ready for food. My mum was very smiley, she wore the tunic top i got her from Debenhams and me & my sis gave cards & pressies to her. But she was very excited, because her friend from Northern Ireland sister was on the next table to us, and mum said let me introduce you to her.  Friends going back a long time when she met them when she was a teenager whilst working in the factory in Hongkong. 
On the table, most of the young people i know too, especially Candy, how small the world it is... going round the circle and the family sitting there is my mums good friend kids.

Anyway, after the introductions we sat on our usual table, mum already written down what she wanted tonight, so dad did the ordering, whilst Me & ken had soup - Black eyed bean, peanut with Chicken feet.  Just chatting with dad and not long all the food came.... hmm King prawns in soya sauce (豉油王蝦), choi sum with squid(魷魚炒菜心), a ceramic pot with belly pork and veg( 梅菜拘肉煲), half a roast duck, half a roast chicken, Pork dumplings (北方水餃) , & egg noodles (乾燒伊麵).


   

Hmm... all the food come along, they all looked and smelled lovely, and we all tuck in, i loved the prawns and the pork in the ceramic pot.... when everyone put the chopstick down, i feel soooo stuffed! There were left over that parents later took back for their late night snacks ;p

Anyway, once all the plates got taken away, and was given fresh dessert ones, we had red bean sweet soup (紅豆糖水), oranges and coconut jelly.  But most important was when heard the music - Happy Birthday, and the Birthday cake came.... me & my sis sung, with all of us clapping our hands. Mum was very smiley, and her friend was there too singing happy birthday, made her soo excited, she didnt know whether to blow out the candle or making a wish. With dad help, mum made a wish, then blow the candle out, follow by taking a few photos with me, sis, dad & gran. Mum & dad took a pic with auntie.  The cake looked really pretty! 




Mum cut the cake, but left it to my dad to divide the cake, all 6 of us had a taste of the cake, Ho's Bakery is our nominated baker, even my gran think its fluffy and not too sweet. 
Mum then opened her pressies & cards.... i got my mum the No7 Beauty serum, which is proven to minimise wrinkles, and she was excited of it.  Dad was also took the opportunity in reading me & my sis cards, and check whether our written chinese have improved or not, but he praised us both for doing well and can see a substantial improvement since a young child. Although, i should think that we have improve.... all that strict teaching by my mum.... would be wasted! 

Anyway, this was a very good evening, walking in the restaurant looking forward to spend the night with my family, and came out feeling full and pleased that my mum had a good day.  Just hope my mum always smiles like that whatever happens.

Like i said on my mums card, for many years she used her heart to look after and take care of me, and now let me hold her hand and i will give my heart to look after and take care of her.
