Golden Egg Tarts

Golden Egg  Tarts. - Make 24.

Ingredients for Pastry:                                             

500g/1lbs     Plain flour
110g/40z      Icing sugar
2 tbspn         Instant skimmed milk powder
280g/100z    Butter
1                  Free range egg
1 tspn          Vanilla Extract


Ingredients for Filling:
8oz              Hot water
4oz              Granulated sugar
4                 Free range egg
1/4 tspn       Salt
3oz             Evaporated Milk
1/8 tspn      Yellow food colouring
1 tspn         Vanilla Extract.

Pastry Making -
1) Beat butter until creamy. Add icing sugar and continue to beat.
2) Add egg & vanilla extract. Continue to beat. Keep stirring until all the mixture becomes soft and creamy.
3) Make a well in the sieved flour & milk powder. Add above mixture in the well.
4) Mix well by lightly pressing & folding the two mixture in repeated motion. Keep folding pastry until it looks like a soft dough.
5) Divide dough into 2 long rolls.  Cut each roll into 12 equal portions.
6) Press each portion into metal cases.

Filling-
7) Dissolve sugar in hot water.
8) In a bowl & whisk mix well with eggs, evaporated milk, vanilla extract, salt and food colouring.
9) Pour slowly dessolved sugar/hot water into egg liquid but stir rapidly.
10) Transfer filling mixture into a jug.

11) Preheat oven to approx 210C
12) pour egg filling mixture into the egg tart pastry.
13) Bake for aprox 15-20 mins.  (The pastry should look golden, and egg should be set when take it out.)
14) Take it out of oven and leave to cool down for 5-10 mins. Take it out from metal/silicon cases and put it in paper cases.
