Fairy cakes

Fairy cakes are the basics of all baking, and it was back in school i learnt how to do it. It made me very happy and a great sense of achievement coming home with my dis-arrayed uniform and me holding a box full of cakes waiting for my mum to be the first taster.  She loved it then, and she still do now, which i made thorough my life when i have time.Nice and simple!


Makes 24

Ingredients:

125gm self-raising flour
125gm softened butter
125gm caster sugar
2          eggs
1tspn    vanilla extract
2tbspn  milk


Instructions:

1)Pre-heat the oven at 190C. Put cake cases in the 12 hole bun tin/baking tray
2)In a mixing bowl beat the butter and sugar until pale and fluffy.
3)Add beaten egg and vanilla extract and mix well
4)Sift flour and milk and mix together the mixture.
5)Spoon into the tin and bake for 12mins or until risen and golden on top.
6)Allow to cool for 10mins on the rack before removing from the tin.
