Brown sugar pudding with red beans

Went for dimsums on sunday with mum, and she ordered a plate of 'boot jai go' (brown sugar pudding).... mum at the end didnt eat it and saved it to put it in a take-away box for a treat at 3pm.  Then mum say to me... 'daughter... remember this is my favourite snack, this remind me of HK'.  So my mum have inspired me in trying out this recipe i found ages ago. Plus i bought some quirky shaped silicone moulds last weekend... so perfect timing to open the little boxes. Something for me to take to work and enjoy my cuppa tea at 3:15pm!



Time: approx 30-45mins
Ingredients:

A)
12oz Rice Flour
4Tbspn Gluten-free Wheat flour
12oz Warm water

B)
8oz  Brown sugar
2lb  Water

Red beans (Azuki) optional.

Instructions:
1) Pre-soak red beans overnight in hot water.
2) Drain the water away from the red beans, then in a pan boil them for 30mins (or longer if you want the beans to be softer). Once drain off water and put it in a container and aside for later use.
3) In a bowl with rice flour & gluten-free wheat flour mix warm water together to from a thick paste.(A)
4)In a saucepan dissolve brown sugar in water and let it cool. (B)
5)Pour the sugar solution into mixture A and stir well.
6)Brush the bowls with little oil if using ceramic bowls. (skip this if using silicone moulds)
7)Pour in the mixture to about 80% its depth.
8)Place the bowls/moulds in a steamer and steam for approx 15-20mins.
