Making Japanese Cheesecake

Come home from work, and got everything ready for tonights supper, but have to wait for him before i can turn on the wok for the stirfry.  So, twindling my thumbs, looking at the clock... and decided to challenge myself inself, considering i not done any baking over the weekend. So Japanese Cheesecake it is from the dimsum recipe book i found. 
But big problem, i don't have a cake tin, so looking at my muffin tin & fairycake tin... i thought... 'yeh used them..'

Gathering the ingredients were fairly simple, then the fun was putting it in to bowl and let it whisk... from getting the cream cheese & butter creaming, from adding the yolks individually...  then adding the flour, milk, lemon.... then finally folding the egg whites into the mixture.


   

Then cake/muffin cases in the tin.... then dividing the mixture evenly.... then in the oven at 120C for 50mins and wait for the final result.



The muffin cheesecakes.. i wish i filled it up now and scared i would have enough mixture.... because the fairy cake tin in comparison looked prettier.

 

Overall....  the light and fluffiness of the cheesecake was just delightful, together with the tang of lemon make it very refreshing, and i think the creamy yellow colour was lovely to the eyes. However, i dont know if that the right colour, as in the recipe book the top of the cheesecake looked slightly brown, but i dont know if thats because its not baked in a cake tin.  But i shall find out when i bake it again soon!
But i am very happy with my first attempt and my very first cheesecake by my hands.
